Flank Steak:
1.5 pounds flank steak,
Onion Mixture:
2 tablespoons olive oil, 2 tablespoons unsalted butter, 2 large yellow onions (thinly sliced), 1 teaspoon sugar, 1 teaspoon balsamic vinegar, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon dried thyme,
Additional:
1 cup shredded Gruyère cheese (or Swiss), 1 tablespoon Dijon mustard, toothpicks or kitchen twine for securing, chopped parsley for garnish (optional)
Instructions
- Caramelize Onions: Heat olive oil and butter in a skillet. Add onions, sugar, salt, pepper, and thyme. Cook until caramelized. Stir in balsamic vinegar.
 - Prepare Steak: Spread Dijon mustard on the steak. Layer caramelized onions and cheese. Roll up steak and secure.
 - Cook: Sear steak, then bake until desired doneness.
 - Serve: Rest, slice, and garnish with parsley.
