Description

French Silk Pie Bars are a luscious, no-bake chocolate dessert featuring a crisp chocolate cookie crust topped with a smooth, silky chocolate filling and a layer of sweet whipped cream. These bars offer the classic flavor and creamy texture of French Silk Pie but in an easy-to-serve bar form, perfect for gatherings or indulgent snacks.

Crust

  • 1 1/2 cups crushed chocolate cookie crumbs (such as Oreos, with filling)
  • 1/4 cup melted butter

Filling

  • 1/2 cup unsalted butter (softened)
  • 2/3 cup granulated sugar
  • 2 ounces unsweetened chocolate (melted and cooled)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Topping

  • 1 1/2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings or curls for garnish (optional)


Instructions

  1. Prepare the crust: Preheat the oven to 350°F (175°C). In a medium bowl, combine the crushed chocolate cookie crumbs with the melted butter until evenly mixed. Press the mixture firmly into the bottom of an 8×8-inch baking dish to form an even crust layer. Bake the crust for 8 minutes, then remove from the oven and allow it to cool completely.
  2. Make the chocolate filling: In a large bowl, cream together the softened unsalted butter and granulated sugar using an electric mixer until the mixture is light and fluffy, about 3 to 5 minutes. Add the melted and cooled unsweetened chocolate along with the vanilla extract and beat until fully incorporated.
  3. Add eggs: Add the eggs one at a time, beating on high speed for 3 to 5 minutes after each addition. This will create a light and silky chocolate filling consistency.
  4. Assemble the filling: Spread the chocolate filling evenly over the completely cooled cookie crust layer in the baking dish.
  5. Prepare the whipped cream topping: In a separate bowl, whip the heavy cream with the powdered sugar until stiff peaks form. Spread this whipped cream layer gently and evenly over the chocolate filling.
  6. Chill and serve: Refrigerate the bars for at least 4 hours or preferably overnight to let the layers set fully. Before serving, garnish with chocolate shavings or curls if desired. Cut into 9 bars and serve chilled.
