Instructions
- Preheat Grill or Oven: Preheat your grill or oven to medium-high heat to prepare for cooking the chicken.
- Season Chicken: Pat the chicken breasts dry with paper towels and season them evenly with salt and freshly ground black pepper.
- Cook Chicken: Grill or roast the chicken breasts for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
- Rest and Slice: Allow the cooked chicken to rest for a few minutes to retain its juices, then slice it into thin strips for the salad.

- Make Dressing: In a separate small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, salt, and black pepper to create a flavorful dressing.

- Add Cheese and Garnish: Crumble feta cheese over the top of the salad and sprinkle with chopped fresh parsley before serving to add texture and a fresh finish.
Notes
- For best flavor, use fresh, high-quality extra virgin olive oil and vinegar.
- Chicken can be cooked ahead of time and chilled before adding to the salad for a quick meal.
- Feel free to add kalamata olives or a splash of lemon juice for additional Mediterranean flair.
- This salad is great served on its own or with warm pita bread.
- Adjust seasoning to taste, especially salt, as feta cheese adds saltiness to the salad.
