  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

For the Cookie Layer:

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper.
  2. For the Brownie Layer: In a medium bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla extract, mixing until well combined. Stir in cocoa powder, flour, salt, and baking powder until no dry streaks remain. Pour the brownie batter evenly into the prepared pan and smooth the top.
  3. For the Cookie Layer: In another bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. Stir in flour, baking soda, and salt until combined, then fold in the chocolate chips. Drop spoonfuls of cookie dough over the brownie batter and gently spread it out as evenly as possible.
  4. Bake for 30–35 minutes or until the top is golden and a toothpick inserted into the center comes out with just a few moist crumbs. Let cool completely in the pan before slicing into bars.

Notes

  • For extra fudgy brookies, slightly underbake them and let them set as they cool.
  • You can use boxed brownie mix and homemade cookie dough to save time.
