- 1/2 teaspoon garlic powder
- 2 tablespoons cornstarch

- 1 tablespoon olive oil (plus more as needed)
- 4 tablespoons butter (divided)
- 4 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
Instructions
- Prepare the chicken: Cut the chicken breasts into bite-size pieces. Place them in a bowl and season generously with salt, pepper, and garlic powder. Sprinkle the cornstarch over the chicken pieces and toss well to evenly coat each piece with the seasoning and cornstarch.
- Heat the skillet: Add the olive oil and 1 tablespoon of butter to a skillet and place it over medium-high heat, allowing it to become hot and shimmering.
- Cook the chicken in batches: Add half of the chicken pieces to the skillet making sure not to overcrowd the pan to ensure proper browning. Cook for about 4 minutes on one side, then flip and cook for another 3 to 4 minutes until the chicken is golden brown and cooked through with an internal temperature of 165°F. Remove the cooked chicken to a plate. Repeat this process with the remaining chicken, adding up to 1 additional tablespoon of olive oil if needed.
- Make the garlic butter sauce: Remove the skillet from the heat and let it cool for about one minute. Add the remaining butter and minced garlic to the pan. Return the skillet to medium heat and cook, stirring almost constantly, for 1 to 2 minutes until the garlic is fragrant and cooked but not burnt.
- Toss chicken in sauce and garnish: Return all the cooked chicken bites to the skillet and toss them thoroughly in the garlic butter sauce. Immediately transfer to serving plates and sprinkle with chopped fresh parsley before serving.
