  • 1 pound salmon (about 1″ thick, skin removed)
  • Salt & pepper (to taste)

  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 4 cloves garlic (minced)
  • 1 tablespoon lemon juice (or to taste)
  • 1 tablespoon chopped fresh parsley


Instructions

  1. Prepare the salmon: Cut the salmon into 1″ pieces and pat dry with paper towels. Season all over with salt and pepper to enhance the flavor.
  2. Heat the pan: Add the olive oil and 1 tablespoon butter to a large skillet and place over medium-high heat until hot.
  3. Cook salmon bites: Place the salmon pieces in the hot skillet and cook undisturbed for 2 minutes. Then, use tongs to turn the pieces, browning all sides and cooking through for an additional 2-3 minutes. Transfer the cooked salmon to a plate.
  4. Make garlic butter sauce: Reduce the heat to medium-low and add the remaining tablespoon of butter to the skillet. Once melted, stir in the minced garlic and cook for about a minute until fragrant, being careful not to burn the garlic. Remove the skillet from heat.
  5. Combine and serve: Return the salmon to the skillet, drizzle with lemon juice, and sprinkle the chopped parsley over the top. Gently toss to coat the salmon evenly in the garlic butter sauce. Serve immediately, adding extra salt and pepper if desired.
