Bread and Garlic Oil

Balsamic Reduction
- 1/4 cup balsamic vinegar
- 1 tablespoon liquid honey
Instructions
- Preheat and prepare garlic oil mixture: Preheat the oven to 350°F (175°C). In a small bowl, combine the olive oil and minced garlic to create the garlic oil mixture.
- Slice and bake the baguette: Slice the baguette into 12 pieces, each approximately 1/2 inch thick. Arrange the slices on a baking sheet and brush both sides of each slice generously with the garlic oil mixture. Bake in the oven for 10 minutes until crisp and lightly toasted.
- Make the balsamic reduction: While the bread bakes, add balsamic vinegar and honey to a small pan. Cook over medium-high heat, reducing as needed, for about 8–10 minutes until the mixture thickens enough to coat the back of a spoon. Avoid overcooking to prevent burning and set aside to cool slightly.
- Prepare toppings: Slice the assorted tomatoes and finely chop the fresh basil while the balsamic reduction cooks.
- Broil mozzarella on crostini: Move the oven rack to the top third and set the broiler to high. Place a slice of fresh mozzarella on each toasted baguette slice. Broil for about 5 minutes, carefully watching to ensure the cheese melts nicely without burning the bread.
