Chicken Stir-Fry:

  • 1 red bell pepper (thinly sliced)
  • 1 cup shredded carrots
  • 1 cup snow peas or snap peas
  • 4 cloves garlic (minced)

Sauce:

  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional for thickening)

Garnish:

  • Sliced green onions and sesame seeds for garnish

Instructions

  1. Cook the noodles: Prepare the lo mein noodles according to package instructions. Toss with sesame oil and set aside.
  2. Prepare the chicken: Season chicken with salt and pepper. Stir-fry in a skillet until fully cooked, then set aside.
  3. Stir-fry vegetables: In the same pan, stir-fry bell pepper, carrots, and snow peas. Add garlic and cook until fragrant.
  4. Combine ingredients: Return chicken to the pan, add cooked noodles, and toss together.
  5. Make the sauce: Whisk together soy sauce, oyster sauce, hoisin sauce, and ginger. Pour over noodles and mix well.
  6. Optional thickening: If desired, add cornstarch slurry and cook briefly for a thicker sauce.
