Mushroom Mixture
- 2 tablespoons unsalted butter, divided
- 1 tablespoon olive oil
- 8 ounces cremini or white mushrooms, sliced

- 1/4 teaspoon dried thyme (optional)
Sandwich
- 4 slices sourdough or hearty sandwich bread
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1 tablespoon mayonnaise or additional softened butter for spreading
Instructions
- Cook Mushrooms: In a skillet over medium heat, melt 1 tablespoon of butter with the olive oil. Add the sliced mushrooms and cook for about 6–8 minutes until browned and their moisture has evaporated.
- Add Garlic and Seasoning: Stir in the minced garlic, salt, pepper, and dried thyme (if using). Cook for another 1–2 minutes to infuse the flavors, then remove the skillet from heat and set aside.
- Prepare Cheese Mixture and Assemble: In a small bowl, mix the shredded mozzarella and cheddar cheeses. Lay out the bread slices, then divide the cheese mixture evenly among two slices. Top the cheese with the garlic mushroom mixture, and place the remaining bread slices on top to form sandwiches.
- Spread and Prepare for Cooking: Spread the outside of each sandwich evenly with mayonnaise or softened butter to help achieve a golden, crispy crust.
