Ingredients
Scale
Chicken and Potatoes
- 4 boneless, skinless chicken breasts, cut into large chunks
- 1 ½ pounds baby red potatoes, halved
Seasoning and Topping
- 3 tablespoons olive oil
- 5 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon paprika
- 1 cup grated Parmesan cheese, divided
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prevent sticking and ensure easy cleanup.
- Mix Seasoning: In a large bowl, combine the olive oil, minced garlic, dried thyme, oregano, basil, paprika, salt, black pepper, and half of the Parmesan cheese. This mixture will create a fragrant and flavorful coating for the chicken and potatoes.
- Toss Chicken and Potatoes: Add the chicken chunks and halved baby red potatoes to the bowl with the seasoning mixture. Toss everything together thoroughly so the chicken and potatoes are evenly coated with the flavorful mixture.
- Arrange on Baking Dish: Spread the coated chicken and potatoes evenly in a single layer on the prepared baking dish or sheet pan. Ensuring they are in a single layer promotes even cooking and browning.
- Bake: Place the dish in the preheated oven and bake for 35 to 40 minutes or until the chicken is cooked through and the potatoes are tender. Stir the contents once halfway through cooking to promote even roasting.
- Add Parmesan Topping: During the last 5 minutes of baking, sprinkle the remaining Parmesan cheese evenly over the top of the chicken and potatoes. Return the dish to the oven so the cheese can melt and become slightly golden and bubbly.
- Garnish and Serve: Remove the baking dish from the oven, garnish with chopped fresh parsley if desired, and serve hot for a delicious and comforting meal.
Notes
- You can substitute Yukon gold or russet potatoes for baby red potatoes if preferred.
- Add a pinch of red pepper flakes to the seasoning mix if you like a bit of heat.
- For crispier potatoes, broil the dish for an additional 2–3 minutes at the end of baking.
