Ingredients
Scale
For the Bread Base
- 4 large slices of sourdough bread or Artisan bread
- 1 Tablespoon extra-virgin olive oil (divided)
- 2 cloves garlic (minced)
Toppings
- 2 Roma tomatoes (sliced thin)
- 8 slices whole fat mozzarella cheese
- ¼ cup freshly grated Parmesan cheese
- salt and pepper (to taste)
- 6 fresh basil leaves (chiffonade)
Instructions
- Prepare the bread: Preheat your oven or toaster oven to 375°F (190°C). Lightly brush the slices of sourdough bread with half of the extra-virgin olive oil, then rub each slice with the minced garlic to infuse flavor.
- Assemble the toppings: Lay the thinly sliced Roma tomatoes evenly over the garlic brushed bread. Season the tomatoes with salt and freshly ground black pepper to enhance their flavor.
- Add cheese: Place the mozzarella slices over the tomatoes to cover them completely, then sprinkle the grated Parmesan cheese generously on top to add a rich, nutty taste.
- Toast the pizza toast: Place the assembled bread slices on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the cheese is melted, bubbly, and slightly golden brown around the edges.
- Finish with basil and olive oil: Remove from the oven and immediately sprinkle the chiffonade of fresh basil leaves over the hot pizza toast. Drizzle the remaining olive oil over the top for a glossy finish and extra flavor.
- Serve: Allow to cool slightly, then serve warm as a delicious snack or light meal.
Notes
- For extra flavor, consider adding a pinch of red pepper flakes before baking.
- Use fresh, high-quality mozzarella and Parmesan for the best taste.
- Substitute the sourdough bread with gluten-free bread to accommodate dietary needs.
- This recipe is customizable—add olives, mushrooms, or pepperoni according to preference.
- If you do not have an oven, a toaster oven or panini press can work as alternative cooking methods.
