For the Chicken Marinade

  • 1 cup shredded lettuce or cucumber slices
  • 1/2 cup crumbled feta cheese
  • 1 cup tzatziki sauce


Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, lemon juice, minced garlic, red wine vinegar, dried oregano, paprika, salt, and black pepper until well combined.
  2. Marinate the Chicken: Add the chicken breasts or thighs to the marinade, tossing them to coat all sides thoroughly. Cover the bowl and refrigerate for at least 30 minutes or up to 4 hours to allow the flavors to infuse.
  3. Preheat the Cooking Surface: Heat a grill pan or skillet over medium-high heat until hot and ready for grilling.
  4. Cook the Chicken: Place the marinated chicken on the grill pan or skillet and cook for 5 to 6 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden brown and cooked through.
  5. Rest and Slice: Remove the cooked chicken from the heat and let it rest for 5 minutes. Then slice the chicken into thin strips for assembling the gyros.
