- 2 tbsp chopped fresh parsley
- 1 tsp dried oregano
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg
- 1/4 cup breadcrumbs
- 2 tbsp olive oil (for frying)
Rice
- 1 cup uncooked basmati or jasmine rice
- 1 1/2 cups water
Fresh Veggies & Toppings

- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup kalamata olives, pitted and halved
- 1/2 cup tzatziki sauce
- Lemon wedges, for serving
Instructions
- Prepare the Meatball Mixture: In a large bowl, combine ground lamb or beef, grated red onion, minced garlic, chopped parsley, dried oregano, ground cumin, salt, black pepper, egg, and breadcrumbs. Mix thoroughly until all ingredients are well incorporated.
- Shape and Cook Meatballs: Shape the mixture into small meatballs about 1 inch in diameter. Heat olive oil in a skillet over medium heat. Cook the meatballs in batches, turning occasionally, until browned on all sides and cooked through, approximately 8 to 10 minutes.
- Cook the Rice: While the meatballs cook, rinse the rice under cold water. Combine rice and water in a pot and cook according to package instructions until tender. Once cooked, fluff the rice with a fork and keep warm.
- Assemble the Bowls: Divide the cooked rice evenly among four serving bowls. Top each bowl with cooked meatballs, diced cucumber, halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, and kalamata olives. Drizzle each bowl with tzatziki sauce.
- Serve: Garnish with lemon wedges on the side for an extra bright flavor. Serve immediately while warm and enjoy your nutritious Greek Meatball Bowl.
Notes
- For a lighter version, substitute ground turkey instead of lamb or beef.
- Add extra veggies such as shredded carrots or chopped bell peppers for added crunch and color.
