Ingredients
Scale
Salmon and Marinade
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1/2 teaspoon sea salt
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon ground black pepper
- 2 pounds salmon fillet
- 1 lemon (sliced into thin rounds)
Vegetables and Toppings
- 24 ounces cherry or grape tomatoes
- 8 ounces mixed olives (black and green)
- 1/2 small red onion (thinly sliced)
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh dill
Instructions
- Preheat oven: Preheat your oven to 400 degrees F (200 degrees C) to get it ready for baking the salmon.
- Make the marinade: In a small bowl, mix together the olive oil, minced garlic, sea salt, dried oregano, paprika, and ground black pepper until combined. This will give the salmon a flavorful coating.
- Prepare the salmon: Pat the salmon fillet dry with paper towels and place it on a large baking sheet lined with parchment paper. Spoon the olive oil mixture evenly over the salmon, making sure to cover the surface. Then, arrange several thin lemon slices on top of the salmon for a citrusy aroma.
- Add vegetables and toppings: Scatter the cherry or grape tomatoes, mixed olives, and thinly sliced red onion around the salmon on the baking sheet. Sprinkle crumbled feta cheese and fresh dill evenly over the salmon and vegetables to infuse the dish with classic Greek flavors.
- Bake the salmon: Place the sheet pan in the preheated oven and bake for 14 to 16 minutes, or until the internal temperature of the salmon reaches 145 degrees F (63 degrees C) and the fish flakes easily with a fork.
- Serve: Remove the salmon from the oven and serve immediately while hot, making sure to include the roasted vegetables and garnishes with each portion.
Notes
- Use an instant-read thermometer to check the salmon’s internal temperature for perfect doneness.
- Substitute fresh oregano for dried if preferred, adjusting quantity to 1 tablespoon.
- If you don’t have parchment paper, lightly grease the baking sheet to prevent sticking.
- This recipe pairs well with a side of steamed greens or a light Greek salad.
- Make sure to not overbake salmon to keep it moist and tender.
