Description

A flavorful and fresh Italian-American dish featuring juicy grilled chicken breasts topped with melted mozzarella, ripe tomatoes, and fresh basil, finished with a drizzle of balsamic glaze. Perfect for a light and satisfying main course.

Ingredients

Scale

Chicken and Seasoning

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Toppings

  • 8 ounces fresh mozzarella, sliced
  • 2 large tomatoes, sliced
  • 1/4 cup fresh basil leaves
  • 2 tablespoons balsamic glaze
  • Extra olive oil for drizzling (optional)

Instructions

  1. Preheat and Prepare: Preheat your grill to medium-high heat. If necessary, pound the chicken breasts to achieve an even thickness for uniform cooking. Rub both sides of the chicken with olive oil and season evenly with Italian seasoning, salt, and black pepper.
  2. Grill the Chicken: Place the chicken breasts on the grill and cook for 5 to 6 minutes on each side. Ensure the internal temperature reaches 165°F (75°C) to guarantee the chicken is thoroughly cooked. As the chicken nears completion, during the last 2 minutes, place slices of fresh mozzarella atop each piece and close the grill lid to gently melt the cheese.
  3. Assemble and Serve: Remove the chicken from the grill and transfer to a serving platter. Layer the grilled chicken with slices of fresh tomato and scatter basil leaves on top. Finish by drizzling balsamic glaze over the dish and add a touch of olive oil if desired. Serve immediately to enjoy the dish at its freshest.

Notes

  • Pair this dish with grilled vegetables, garlic bread, or a light arugula salad for a complete meal.
  • Use store-bought balsamic glaze or create a homemade version by reducing balsamic vinegar on the stovetop to your desired thickness.
