- 1 large eggplant, sliced vertically into 1/5-inch slices
- 3 zucchinis, sliced vertically into thin slices
- 3 squash, sliced into thin slices
For Grilling

For Yogurt Sauce
- ½ cup Greek yogurt
- ½ garlic clove, crushed
- ½ teaspoon cumin powder
- Squeeze of lemon juice
- Salt and pepper, to taste
- Extra pinch of cumin, for garnish
Garnish
- Parsley or cilantro leaves
- Lemon wedges
Instructions
- Prepare the Yogurt Sauce: In a bowl, mix together Greek yogurt, crushed garlic, cumin powder, lemon juice, salt, and pepper until well combined to create a creamy, tangy dipping sauce.
- Refrigerate the Sauce: Cover the sauce bowl and refrigerate until ready to serve to allow the flavors to meld.
- Preheat the Grill: Heat an outdoor grill to high temperature or place a grill pan over high heat on the stove, ensuring it’s hot before cooking the vegetables.
- Oil the Grill Surface: Lightly drizzle olive oil on the grill or grill pan to prevent the vegetables from sticking and to enhance charring.
- Grill the Vegetables: Arrange the prepared vegetables on the hot grill surface. Grill each side for about 1.5 to 2 minutes until they develop nice char marks and become tender.
- Season and Serve: Transfer the grilled vegetables to a serving platter, season with salt and pepper to taste, and drizzle with the prepared yogurt sauce.
- Garnish: Finish by garnishing the vegetables with fresh parsley or cilantro leaves, an extra pinch of cumin over the yogurt sauce, and lemon wedges on the side for added brightness.
Notes
- For best results, slice vegetables evenly to ensure uniform grilling.
- Use a grill pan if an outdoor grill is unavailable to achieve similar charred flavors.
- Adjust the amount of garlic and cumin in the sauce according to your taste preferences.
- The yogurt sauce can be prepared a day ahead to deepen the flavors.
- This dish pairs well with warm pita bread or as a side for grilled meats.
