Description

A vibrant and healthy grilled vegetable platter featuring a variety of fresh vegetables charred to perfection, served with a flavorful cumin-spiced Greek yogurt sauce. This easy-to-make dish is perfect for a light lunch, side dish, or vegetarian-friendly meal.

Ingredients

Scale

Vegetables

  • 1 red bell pepper, sliced
  • 1 red onion, peeled and cut into 12 wedges
  • 1 large eggplant, sliced vertically into 1/5-inch slices
  • 3 zucchinis, sliced vertically into thin slices
  • 3 squash, sliced into thin slices

For Grilling

  • Olive oil
  • Salt
  • Pepper

For Yogurt Sauce

  • ½ cup Greek yogurt
  • ½ garlic clove, crushed
  • ½ teaspoon cumin powder
  • Squeeze of lemon juice
  • Salt and pepper, to taste
  • Extra pinch of cumin, for garnish

Garnish

  • Parsley or cilantro leaves
  • Lemon wedges

Instructions

  1. Prepare the Yogurt Sauce: In a bowl, mix together Greek yogurt, crushed garlic, cumin powder, lemon juice, salt, and pepper until well combined to create a creamy, tangy dipping sauce.
  2. Refrigerate the Sauce: Cover the sauce bowl and refrigerate until ready to serve to allow the flavors to meld.
  3. Preheat the Grill: Heat an outdoor grill to high temperature or place a grill pan over high heat on the stove, ensuring it’s hot before cooking the vegetables.
  4. Oil the Grill Surface: Lightly drizzle olive oil on the grill or grill pan to prevent the vegetables from sticking and to enhance charring.
  5. Grill the Vegetables: Arrange the prepared vegetables on the hot grill surface. Grill each side for about 1.5 to 2 minutes until they develop nice char marks and become tender.
  6. Season and Serve: Transfer the grilled vegetables to a serving platter, season with salt and pepper to taste, and drizzle with the prepared yogurt sauce.
  7. Garnish: Finish by garnishing the vegetables with fresh parsley or cilantro leaves, an extra pinch of cumin over the yogurt sauce, and lemon wedges on the side for added brightness.

Notes

  • For best results, slice vegetables evenly to ensure uniform grilling.
  • Use a grill pan if an outdoor grill is unavailable to achieve similar charred flavors.
  • Adjust the amount of garlic and cumin in the sauce according to your taste preferences.
  • The yogurt sauce can be prepared a day ahead to deepen the flavors.
  • This dish pairs well with warm pita bread or as a side for grilled meats.
