For the Stir Fry:

  • 1 tablespoon sesame oil
  • 1 pound ground turkey
  • 3 garlic cloves, minced
  • 1 teaspoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 2 green onions, sliced
  • 2 tablespoons sesame seeds (optional)

For the Teriyaki Sauce:

  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1 teaspoon toasted sesame oil


Instructions

  1. Prepare the Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, water, and sesame oil. Set aside.
  2. Cook the Ground Turkey: Heat sesame oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it apart with a spoon, about 6 to 8 minutes.
  3. Add Vegetables: Stir in garlic, ginger, bell pepper, broccoli, and snap peas. Stir-fry for 3-4 minutes until just tender.
  4. Combine with Sauce: Pour the teriyaki sauce into the skillet and cook for 2-3 minutes until thickened.
  5. Finish and Serve: Remove from heat, sprinkle with green onions and sesame seeds. Serve over rice, quinoa, or noodles.

Notes

  • You can customize the vegetables to your preference.
