Description

These Healthier Banana Cookies are a delicious, wholesome treat made with ripe bananas, peanut butter, oats, and dark chocolate chips. Perfect for a guilt-free snack, they deliver natural sweetness and good nutrition without refined ingredients.

Ingredients

Scale

Banana Mixture

  • 3 very ripe bananas
  • 1 cup peanut butter
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut sugar

Dry Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F to prepare for baking the cookies evenly.
  2. Mash Bananas: Peel the ripe bananas and place them in a large mixing bowl. Use a fork to mash them thoroughly until smooth.
  3. Mix Wet Ingredients: Add peanut butter, vanilla extract, and coconut sugar to the mashed bananas. Stir well to combine all wet ingredients into a uniform mixture.
  4. Add Dry Ingredients: Stir in the rolled oats until fully incorporated, then fold in the dark chocolate chips gently to distribute evenly.
  5. Form Cookies: Use a cookie scoop or a large spoon to portion out golf ball sized rounds of dough onto a parchment-lined baking sheet, spacing them apart.
  6. Bake: Place the baking sheet in the oven and bake cookie rounds for 15 to 17 minutes until they turn golden brown and set.
  7. Cool and Serve: Remove the cookies from the oven and let them cool for a few minutes on the baking sheet before transferring to a wire rack or serving.

Notes

  • Use very ripe bananas for the best natural sweetness and softer cookie texture.
  • If you prefer less sweetness, reduce the coconut sugar slightly.
  • For nut-free, substitute peanut butter with sunflower seed butter.
  • Store cookies in an airtight container at room temperature for up to 3 days or freeze for longer storage.
  • These cookies are naturally gluten-free if certified gluten-free oats are used.
