Description

A healthy, dairy-free coffee walnut fudge made with natural sweeteners and simple ingredients. This no-bake treat combines the rich flavors of strong brewed coffee and cocoa with the crunch of walnuts, perfect for a guilt-free indulgence.

Ingredients

Scale

Main Ingredients

  • 1/2 cup coconut oil, melted
  • 1/4 cup pure maple syrup
  • 1/4 cup strong brewed coffee, cooled
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup walnuts, chopped

Instructions

  1. Prepare the Baking Dish: Line a small baking dish (approximately 8×8 inches) with parchment paper to prevent sticking and make removal of the fudge easier.
  2. Mix Wet Ingredients: In a medium-sized mixing bowl, whisk together the melted coconut oil, pure maple syrup, cooled strong brewed coffee, unsweetened cocoa powder, vanilla extract, and sea salt until everything is fully combined and smooth.
  3. Add Walnuts: Stir the chopped walnuts into the fudge mixture evenly, distributing the crunch throughout.
  4. Pour and Spread: Pour the combined fudge mixture into the prepared baking dish and spread it out evenly using a spatula or the back of a spoon.
  5. Refrigerate to Set: Place the baking dish in the refrigerator and chill for at least 2 hours or until the fudge has hardened and set firmly.
  6. Serve: Once set, remove the fudge from the fridge, lift it out using the parchment paper, cut into 12 squares, and enjoy your healthy coffee walnut fudge.

Notes

  • Use strong brewed coffee for the best flavor impact; espresso can also be used for a more intense coffee taste.
  • Store fudge squares in an airtight container in the refrigerator for up to one week.
  • For a nut-free version, replace walnuts with sunflower seeds or omit entirely and add extra cocoa powder.
  • Ensure the coconut oil is fully melted but not hot to prevent cooking the maple syrup or coffee mixture.
