Ingredients
Scale
Main Ingredients
- 2 cups plain Greek yogurt (full-fat or 2%)
- ½ cup natural peanut butter (smooth or creamy)
- 3 tablespoons honey or pure maple syrup
- 1 teaspoon vanilla extract
Optional Add-ins and Toppings
- 2–3 tablespoons mini chocolate chips (optional)
- ¼ cup granola or crushed peanuts (optional topping)
Instructions
- Line the Pan: Line an 8×8-inch pan with parchment paper, leaving an overhang on the sides for easy removal of the frozen bars later.
- Mix the Base: In a mixing bowl, thoroughly stir together the Greek yogurt, natural peanut butter, honey or maple syrup, and vanilla extract until you achieve a smooth and well-combined mixture.
- Add Chocolate Chips: Fold in the mini chocolate chips gently if you choose to include them for added texture and sweetness.
- Spread and Smooth: Pour the yogurt mixture into the prepared pan and use a spatula to spread it out evenly, smoothing the surface for uniform thickness.
- Add Toppings: Sprinkle granola or crushed peanuts evenly over the top of the mixture and press them in gently so they stick as the bars freeze.
- Freeze: Place the pan in the freezer and let it freeze for at least 3 hours or until the mixture is firm and set completely.
- Slice and Serve: Once frozen, lift the block out of the pan using the parchment paper overhang, let it sit at room temperature for 2 to 3 minutes to soften slightly, then slice into 9 to 12 bars and enjoy immediately or store in the freezer.
Notes
- Use full-fat Greek yogurt for creamier texture and richer flavor, or 2% for a lighter option.
- Natural peanut butter with no added sugars or oils works best for a healthy recipe.
- Optional chocolate chips and toppings add crunch and sweetness but can be omitted to keep it simpler or lower in sugar.
- Bars can be stored in an airtight container in the freezer for up to 1 week.
- Letting the bars sit a few minutes before slicing makes cutting easier and ensures clean slices.
