Wet Ingredients:

  • 1 large egg
  • ⅓ cup honey or maple syrup
  • ¼ cup coconut oil (melted)
  • ¾ cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Additional:

  • 1½ cups fresh rhubarb (chopped)
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat to 350°F (175°C) and prepare a loaf pan.
  2. Mix dry ingredients: Combine flour, oats, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
  3. Combine wet ingredients: Whisk egg, honey/maple syrup, melted coconut oil, applesauce, and vanilla.
  4. Combine mixtures: Add wet ingredients to dry, mix, then fold in rhubarb and nuts.
  5. Bake: Pour batter into pan, bake for 50–60 mins, then cool on a wire rack.

Notes

  • You can freeze this bread for up to 3 months.
  • If rhubarb is tart, add 1–2 tbsp of coconut sugar.
  • For nut-free option, omit the nuts.
