- 1 teaspoon baking soda

Wet Ingredients:
- 1 large egg
- ⅓ cup honey or maple syrup
- ¼ cup coconut oil (melted)
- ¾ cup unsweetened applesauce
- 1 teaspoon vanilla extract
Additional:
- 1½ cups fresh rhubarb (chopped)
- ¼ cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven: Preheat to 350°F (175°C) and prepare a loaf pan.
- Mix dry ingredients: Combine flour, oats, baking soda, baking powder, salt, cinnamon, and nutmeg in a bowl.
- Combine wet ingredients: Whisk egg, honey/maple syrup, melted coconut oil, applesauce, and vanilla.
- Combine mixtures: Add wet ingredients to dry, mix, then fold in rhubarb and nuts.
- Bake: Pour batter into pan, bake for 50–60 mins, then cool on a wire rack.
Notes
- You can freeze this bread for up to 3 months.
- If rhubarb is tart, add 1–2 tbsp of coconut sugar.
- For nut-free option, omit the nuts.
