Ingredients
Scale
Chicken
- 1 1/2 pounds boneless skinless chicken breasts, cut into nugget-size pieces
Breading
- 2 cups crushed BBQ-flavored potato chips
- 1/2 cup plain breadcrumbs
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
Coating
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Other
- 2 large eggs, beaten
- Optional: ranch or BBQ sauce for dipping
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking and make cleanup easier.
- Prepare Breading Mixture: In a shallow bowl, combine the crushed BBQ-flavored potato chips, plain breadcrumbs, smoked paprika, and garlic powder. This mixture will provide the flavorful and crunchy coating.
- Prepare Wet and Dry Stations: In one shallow bowl, whisk the eggs until smooth. In a separate shallow bowl, mix the all-purpose flour with salt and black pepper. These will be used to dredge the chicken pieces before coating.
- Coat Chicken Nuggets: Take each chicken piece and dredge it first in the flour mixture, ensuring it’s evenly coated. Then dip it into the beaten eggs, allowing excess to drip off. Finally, coat thoroughly with the BBQ chip breadcrumb mixture, pressing gently to adhere.
- Arrange on Baking Sheet: Place the coated chicken nuggets in a single layer on the prepared baking sheet, ensuring they do not touch to allow crisping.
- Bake the Nuggets: Bake in the preheated oven for 18 to 20 minutes, flipping the nuggets halfway through the cooking time to ensure even browning. The nuggets are done when golden brown and reach an internal temperature of 165°F (74°C).
- Serve: Remove the nuggets from the oven and serve hot with your favorite dipping sauce such as ranch or BBQ sauce for added flavor.
Notes
- For extra crispiness, lightly spray the nuggets with cooking spray before baking.
- These nuggets can also be cooked in an air fryer at 375°F (190°C) for 12–14 minutes for a quicker alternative.
- Ensure chicken pieces are cut to similar sizes for even cooking.
- Use a meat thermometer to confirm the internal temperature reaches a safe 165°F (74°C).
