Description

Delicious homemade granola bars featuring a chewy blend of rolled oats, marshmallows, chocolate chips, and crunchy rice cereal all held together with a buttery honey syrup. Perfect for a quick snack or on-the-go breakfast treat.

Ingredients

Scale

Dry Ingredients

  • 2 1/2 cups rolled oats
  • 1 cup graham cracker crumbs
  • 1 cup rice cereal

Wet Ingredients

  • 1/2 cup honey (or maple syrup or brown rice syrup)
  • 1/3 cup butter

Add-ins

  • 1 cup mini marshmallows
  • 1 cup chocolate chips

Instructions

  1. Melt Butter and Honey: In a saucepan, melt the butter and honey over medium heat. Cook the mixture until it begins to bubble and thickens slightly, which helps to bind the bars together.
  2. Combine Dry Ingredients: In a large bowl, mix together rolled oats, graham cracker crumbs, and rice cereal until well combined.
  3. Mix Wet and Dry Ingredients: Pour the warm honey and butter mixture over the dry ingredients. Stir thoroughly so every bit is coated with the syrup, ensuring stickiness.
  4. Add Marshmallows and Chocolate Chips: Allow the mixture to cool for a few minutes so the marshmallows don’t melt excessively, then gently fold in the mini marshmallows and chocolate chips for bursts of sweetness and texture.
  5. Press Into Pan: Transfer the mixture to a greased or parchment-lined 9×13-inch baking dish. Press firmly and evenly to compress the ingredients into a compact bar shape.
  6. Cool and Slice: Let the mixture cool completely at room temperature to set. Once firm, slice into 16 bars and serve or store for later enjoyment.

Notes

  • You can substitute honey with maple syrup or brown rice syrup depending on your preference or dietary needs.
  • Pressing the mixture firmly into the pan ensures the bars hold together well and don’t crumble easily.
  • Store granola bars in an airtight container at room temperature for up to a week or refrigerate to extend freshness.
  • For added nutrition, consider adding nuts or dried fruit to the mix before pressing.
