- 2 cups dry oatmeal
- 2 scoops vanilla protein powder
- 2 bananas
- 4 egg whites
- 1 tsp baking soda
- 1 tbsp vanilla extract
- 1 tsp cinnamon

- 1 cup almonds, walnuts, raisins, or craisins (choose any)
- 1 tbsp chia seeds
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) to prepare it for baking the muffins.
- Mix ingredients: In a large bowl, combine oats, vanilla protein powder, mashed bananas, egg whites, baking soda, vanilla extract, and cinnamon. Stir until all ingredients are well incorporated. Optionally, fold in your choice of nuts, dried fruit, or chia seeds for added texture and nutrition.
- Fill muffin pan: Divide the batter evenly into a 12-cup muffin pan, filling each cup about three-quarters full to allow room for rising.
- Bake the muffins: Place the muffin pan in the preheated oven and bake for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean. The muffins should be lightly golden.
- Cool and serve: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Enjoy as a power-packed snack or breakfast.
