Chicken
- 4 bone-in, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp salt (or to taste)
- 1/2 tsp pepper (or to taste)
- 1/4 tsp red pepper flakes (optional for some heat)
Vegetables
- 4 medium potatoes, cut into 1-inch cubes
- 1 lb fresh green beans, trimmed
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp salt (or to taste)
- 1/2 tsp pepper (or to taste)
Garnishes (Optional)
- 1 tbsp fresh parsley, chopped
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet or large baking dish with parchment paper or lightly grease it with cooking spray for easy cleanup.
- Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season both sides with half of the garlic powder, onion powder, oregano, basil, salt, and pepper. Drizzle with 1 tablespoon of olive oil.
- Prepare the Potatoes and Green Beans: In a large mixing bowl, toss the diced potatoes with 1 tablespoon of olive oil, the remaining half of the garlic powder, onion powder, oregano, salt, and pepper until evenly coated. Add the trimmed green beans to the same bowl and toss with any remaining seasoning mix.
- Assemble on the Baking Sheet: Place the seasoned chicken breasts in the center of the prepared baking sheet or dish. Arrange the seasoned potatoes around the chicken, and scatter the green beans on the other side.
- Drizzle with Olive Oil: Drizzle everything with a little more olive oil if desired for extra crispness.
- Bake: Roast in the preheated oven for 30-40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are fork-tender. For crispier potatoes, broil for an additional 2-3 minutes at the end of cooking.
- Optional Garnishes: Remove the pan from the oven. Sprinkle fresh parsley and grated Parmesan cheese over the chicken and vegetables for added flavor.
- Serve and Enjoy: Serve the chicken, potatoes, and green beans on plates and enjoy your simple, flavorful meal.
Notes
- Bone-in chicken provides more flavor and remains juicier but adjust cooking time accordingly if using thighs or other cuts.
- You can substitute fresh green beans with frozen ones—just thaw and pat dry before adding.
- Use parchment paper or foil on the baking sheet for easier cleanup.
- Adjust seasoning to your taste; add more red pepper flakes if you like it spicy.
- To check doneness, use a meat thermometer for the chicken; potatoes should be tender when pierced with a fork.
- Leftovers keep well in the refrigerator for 3-4 days.
