  • 12 oz wide egg noodles
  • 1 tablespoon olive oil
  • 1 pound Italian sausage (mild or spicy, casings removed)

  • 1 small onion (sliced)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 3 cloves garlic (minced)
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon Italian seasoning
  • ½ cup dry white wine
  • 1 (14.5 oz) can diced tomatoes (with juice)
  • 2 tablespoons tomato paste
  • Salt and pepper to taste
  • ¼ cup chopped fresh basil
  • Grated Parmesan cheese (for serving)


Instructions

  1. Cook the Noodles: Cook egg noodles according to package instructions until al dente. Drain and set aside.
  2. Sear the Sausage: In a large skillet, heat olive oil and cook Italian sausage until browned. Remove sausage and set aside.
  3. Sauté Veggies: In the same skillet, sauté onion, bell peppers, garlic, red pepper flakes, and Italian seasoning.
  4. Deglaze and Simmer: Pour in white wine, scrape up any bits, then add diced tomatoes and tomato paste. Season and simmer.
  5. Combine and Garnish: Return sausage to the pan, add noodles, toss to combine. Garnish with basil and Parmesan.

Notes

  • Use chicken or turkey sausage as a leaner alternative.
  • Substitute the wine with chicken broth if preferred.
  • Add spinach or arugula at the end for extra greens.
