Description

A comforting and hearty Italian Ground Turkey Soup packed with vegetables, white beans, and flavorful herbs. This gluten-free soup is perfect for a cozy and nutritious meal.

For the Soup:

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 2 medium carrots (peeled and sliced)
  • 2 celery stalks (sliced)
  • 1 zucchini (diced)
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 can (15 oz) white beans or cannellini beans (drained and rinsed)
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh spinach or kale (chopped)

Optional for Serving:

  • Grated Parmesan cheese


Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned, breaking it up with a spoon, about 5–6 minutes.
  2. Add diced onion and garlic, and sauté for 2–3 minutes until softened.
  3. Stir in carrots, celery, and zucchini, and cook for another 4–5 minutes.
  4. Add diced tomatoes, beans, chicken broth, basil, oregano, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and simmer uncovered for 20–25 minutes, until vegetables are tender.
  5. Stir in spinach or kale and cook for 2–3 more minutes until wilted.
  6. Taste and adjust seasoning if needed. Serve hot with a sprinkle of Parmesan cheese, if desired.

Notes

  • This soup can be made ahead and tastes even better the next day.
  • It freezes well for up to 3 months.
  • For a heartier option, add 1/2 cup of cooked pasta or brown rice.
