Instructions
- Season and sear chicken: Season chicken breasts evenly with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 4–5 minutes on each side, or until they develop a golden crust and reach an internal temperature of 165°F (74°C). Remove chicken from skillet and set aside.
- Prepare the glaze: In the same skillet, melt the butter over medium heat. Add minced garlic and sliced jalapeño, cooking for about 1 minute until fragrant but not browned. Stir in honey, apple cider vinegar, soy sauce, and Dijon mustard to combine the sauce.
- Cook peaches with glaze: Add the sliced peaches to the skillet, cooking for 3–4 minutes until they soften slightly and the glaze thickens into a saucy consistency.
- Combine chicken with glaze: Return the seared chicken breasts to the skillet. Spoon the peach-jalapeño glaze over the chicken and simmer together for 2–3 minutes to reheat the chicken and allow flavors to meld.
