Description

Jalapeño Peach Chicken is a vibrant and flavorful main course that perfectly balances sweet and spicy notes. Tender chicken breasts are seared to golden perfection and topped with a luscious glaze made from fresh peaches, jalapeño, honey, and savory seasonings. This quick stovetop recipe is ideal for a summer dinner and pairs wonderfully with rice, quinoa, or grilled vegetables.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Glaze

  • 2 fresh peaches, sliced
  • 1 jalapeño, thinly sliced (seeds removed for less heat)
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon butter

Garnish

  • Fresh basil or cilantro (optional)

Instructions

  1. Season and sear chicken: Season chicken breasts evenly with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 4–5 minutes on each side, or until they develop a golden crust and reach an internal temperature of 165°F (74°C). Remove chicken from skillet and set aside.
  2. Prepare the glaze: In the same skillet, melt the butter over medium heat. Add minced garlic and sliced jalapeño, cooking for about 1 minute until fragrant but not browned. Stir in honey, apple cider vinegar, soy sauce, and Dijon mustard to combine the sauce.
  3. Cook peaches with glaze: Add the sliced peaches to the skillet, cooking for 3–4 minutes until they soften slightly and the glaze thickens into a saucy consistency.
  4. Combine chicken with glaze: Return the seared chicken breasts to the skillet. Spoon the peach-jalapeño glaze over the chicken and simmer together for 2–3 minutes to reheat the chicken and allow flavors to meld.
  5. Garnish and serve: Remove from heat, garnish with fresh basil or cilantro if desired, and serve warm alongside your favorite side dishes like rice, quinoa, or grilled vegetables.

Notes

  • This dish pairs exceptionally well with rice, quinoa, or grilled vegetables for a balanced meal.
  • You can substitute nectarines in place of peaches if preferred.
  • Adjust the spiciness by adding more jalapeño slices or leaving the seeds in for extra heat.
  • For a gluten-free option, ensure your soy sauce is gluten-free.
