  • 3 cups corn kernels (fresh or frozen, thawed)
  • 1 cup sharp cheddar cheese (shredded)
  • 6 slices bacon (cooked and crumbled)
  • 1 small red onion (diced)

  • 2 tablespoons cilantro (chopped, optional)

Dressing

  • 4 ounces cream cheese (softened)
  • 1/3 cup mayonnaise
  • 2 tablespoons lime juice (fresh)
  • Salt and pepper (to taste)


Instructions

  1. Cook the corn. Boil or grill fresh corn on the cob until tender. Once cooled, cut off the kernels. If using frozen corn, simply thaw completely and pat dry to remove excess moisture.
  2. Make the dressing. In a large mixing bowl, combine the softened cream cheese, mayonnaise, fresh lime juice, salt, and pepper. Whisk together until the mixture is smooth and creamy.
  3. Mix in ingredients. Fold the corn kernels, shredded cheddar cheese, crumbled bacon, diced red onion, and chopped jalapeños into the prepared dressing. Stir gently to evenly coat all the ingredients while maintaining their texture. Taste and adjust seasoning with additional salt, pepper, or lime juice if desired.
  4. Chill the salad. Cover the bowl and refrigerate the salad for at least 30 minutes to allow the flavors to meld and the dressing to thicken slightly.
