Description

A hearty and flavorful casserole recipe named after the legendary John Wayne. This Tex-Mex inspired dish features layers of seasoned ground beef, vegetables, and a cheesy topping, all baked to perfection.

Ground Beef Mixture:

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water

Vegetable Layers:

  • 1 can (4 ounces) diced green chiles
  • 1 large onion, sliced
  • 1 large green bell pepper, sliced
  • 2 large tomatoes, sliced

Cheesy Topping:

  • 2 cups shredded cheddar cheese
  • 1 cup mayonnaise
  • 1 cup sour cream

Crust:

  • 2 cups Bisquick baking mix
  • 1/2 cup water

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Cook the beef: In a skillet over medium heat, cook the ground beef until browned, then drain any excess fat. Stir in taco seasoning and 1/4 cup water, cooking for 2–3 minutes until well combined.
  3. Prepare the crust: In a medium bowl, mix together Bisquick and 1/2 cup water to form a soft dough. Press the dough evenly into the bottom of a greased 9×13-inch baking dish.
  4. Layer the casserole: Spread the seasoned beef over the crust. Top with green chiles, onion slices, bell pepper slices, and tomato slices.
  5. Make the cheesy topping: In a separate bowl, combine mayonnaise, sour cream, and half of the cheddar cheese. Spread this mixture evenly over the vegetables. Sprinkle the remaining cheddar cheese on top.
  6. Bake: Bake uncovered for 30–35 minutes, until bubbly and golden brown on top.
  7. Serve: Let rest for 5 minutes before slicing and serving.

Notes

  • For extra spice, add pickled jalapeños between the beef and vegetable layers.
  • You can substitute ground turkey for beef if preferred.
  • Leftovers reheat well in the oven or microwave.
