Ingredients
Scale
Vegetable Filling
- 1 tablespoon olive oil
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 8 ounces mushrooms, sliced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
Roll Ups
- 1 pound thinly sliced deli roast beef
- 8 slices provolone cheese
Instructions
- Sauté Vegetables: Heat the olive oil in a large skillet over medium heat. Add the sliced bell pepper, onion, and mushrooms. Sauté for 6–8 minutes until the vegetables are tender and lightly browned. Season with salt, black pepper, garlic powder, and smoked paprika, then remove from heat.
- Assemble Roll Ups: Lay out the slices of roast beef on a clean flat surface. Place one slice of provolone cheese over each piece of beef. Spoon a small amount of the cooked vegetable mixture onto each slice, then roll them up tightly to encase the filling.
- Warm and Melt Cheese: Arrange the roll ups seam-side down in the skillet or a baking dish. Cover and warm over low heat on the stovetop, or place in a preheated oven at 350°F (175°C) for 10 minutes until the cheese has melted and everything is heated through. Serve immediately while hot.
Notes
- For added richness, spread a thin layer of cream cheese or horseradish sauce on the roast beef before adding the vegetable filling.
- To add a crispy cheese top, broil the roll ups for 2–3 minutes after warming.
