  2. Prepare chicken and veggies: While the noodles are soaking, peel and chop the potatoes into chunks, chop the onion, slice the carrot, and prepare the chicken thighs by trimming any excess fat if needed.
  3. Mix sauce: In a bowl, whisk together the soy sauce, brown sugar, minced garlic, and fresh ginger until the sugar dissolves and the mixture is well combined.
  4. Brown the chicken: Heat the vegetable oil in a large pot over medium heat, then add the chicken thighs. Sear them until they develop a golden brown color on all sides, which enhances flavor.
  5. Add ingredients: Pour the prepared sauce mixture into the pot with the chicken, then add the potatoes, carrots, sliced mushrooms, chopped onion, and water. Stir everything together and bring the liquid to a boil.
