Description

A flavorful Mediterranean Baked Fish recipe featuring tender white fish fillets baked with olives, cherry tomatoes, and a zesty lemon and herb marinade. Perfect for a healthy, light main course that is quick and easy to prepare.

Ingredients

Scale

Main Ingredients

  • 4 white fish fillets (such as cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 lemon (zest and juice)
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1/3 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a baking dish to ensure the fish doesn’t stick during cooking.
  2. Prepare the Marinade: In a small bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, dried oregano, smoked paprika, salt, and black pepper. Mix well to form a flavorful marinade.
  3. Coat the Fish: Place the fish fillets in the prepared baking dish and brush or spoon the marinade evenly over each fillet to coat them thoroughly.
  4. Add Vegetables and Olives: Scatter the halved cherry tomatoes, Kalamata olives, and thinly sliced red onion evenly around and on top of the fish fillets.
  5. Bake the Fish: Bake the dish uncovered in the preheated oven for 15 to 18 minutes, or until the fish flakes easily with a fork and is opaque in the center, indicating it is fully cooked.
  6. Garnish and Serve: Remove the baking dish from the oven, sprinkle the fresh chopped parsley over the fish, and serve warm with lemon wedges on the side for an extra burst of citrus flavor.

Notes

  • This dish pairs wonderfully with couscous, rice, or a simple green salad.
  • Choose your favorite firm white fish and adjust baking time if fillets are thicker or thinner than average.
  • For added flavor, try adding capers or a splash of white wine to the marinade before baking.
