Salmon and Vegetables

  • 1 ½ pounds salmon fillet (skin on)
  • 2 large red peppers (or 6-8 mini peppers), sliced
  • 1-2 large zucchini, sliced
  • 1 tablespoon Italian seasoning
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ½ pound cherry tomatoes


Instructions

  1. Preheat the oven: Heat the oven to 400°F (200°C). Line a sheet pan with baking parchment to prevent sticking and facilitate easy cleanup.
  2. Prepare the salmon topping: In a small bowl, stir together the tomato paste, olive oil, mustard, Italian seasoning, paprika, salt, and ground black pepper until well combined. Place the salmon fillet in the center of the prepared sheet pan and spread the topping evenly over the top of the salmon.
