Scale
Topping for Salmon
- ¼ cup tomato paste
- 2 tablespoons olive oil
- 1 teaspoon mustard
- 1 tablespoon Italian seasoning
- 1 teaspoon ground paprika
- ½ teaspoon salt
- Ground black pepper to taste
Salmon and Vegetables
- 1 ½ pounds salmon fillet (skin on)
- 2 large red peppers (or 6-8 mini peppers), sliced
- 1-2 large zucchini, sliced
- 1 tablespoon Italian seasoning
- 1 tablespoon olive oil
- Salt and pepper to taste
- ½ pound cherry tomatoes
Instructions
- Preheat the oven: Heat the oven to 400°F (200°C). Line a sheet pan with baking parchment to prevent sticking and facilitate easy cleanup.
- Prepare the salmon topping: In a small bowl, stir together the tomato paste, olive oil, mustard, Italian seasoning, paprika, salt, and ground black pepper until well combined. Place the salmon fillet in the center of the prepared sheet pan and spread the topping evenly over the top of the salmon.
- Toss vegetables: In a large bowl, combine the sliced red peppers and zucchini. Toss them with 1 tablespoon of Italian seasoning, 1 tablespoon olive oil, and salt and pepper to taste until the vegetables are well coated.
- Arrange vegetables and tomatoes: Arrange the seasoned peppers and zucchini evenly around the salmon on the sheet pan. Place the cherry tomatoes on top of the vegetables and salmon for added flavor and color.
- Bake the dish: Place the sheet pan in the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the vegetables are tender. Cooking time may vary depending on the thickness of the salmon fillet.
Notes
- Ensure not to overcook the salmon for best texture—check for flakiness with a fork after 15 minutes.
- You can substitute mustard with Dijon mustard for a milder taste.
- Use fresh Italian seasoning for a brighter herb flavor or dried for convenience.
- Feel free to swap vegetables based on seasonal availability.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
