Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the galette.
- Prepare Vegetables: In a mixing bowl, toss the thinly sliced zucchini, red and yellow/orange bell peppers, red onion, and halved cherry tomatoes with olive oil, salt, pepper, and chopped fresh thyme or basil to evenly coat the vegetables with seasoning and herbs.
- Roll Out Dough: On a floured surface, roll out the puff pastry or pie dough into a 12-inch diameter circle. Carefully transfer the rolled dough onto a parchment-lined baking sheet to prevent sticking and for easy transfer in and out of the oven.
- Spread Cheese: Evenly spread the herbed goat cheese or ricotta over the center of the dough, leaving a 2-inch border around the edges for folding.
- Arrange Vegetables: Layer the seasoned and tossed vegetables on top of the cheese, overlapping them slightly to create an even and attractive vegetable layer.
- Fold Edges and Egg Wash: Fold the 2-inch border of dough up and over the vegetable filling to create a rustic edge. Brush the exposed crust with the beaten egg to give it a golden, glossy finish when baked.
- Bake Galette: Place the galette in the preheated oven and bake for 35–40 minutes or until the crust is golden brown and the vegetables are tender and cooked through.
- Cool and Serve: Allow the galette to cool slightly on a wire rack before slicing and serving warm or at room temperature.
