Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the galette.
  2. Prepare Vegetables: In a mixing bowl, toss the thinly sliced zucchini, red and yellow/orange bell peppers, red onion, and halved cherry tomatoes with olive oil, salt, pepper, and chopped fresh thyme or basil to evenly coat the vegetables with seasoning and herbs.
  3. Roll Out Dough: On a floured surface, roll out the puff pastry or pie dough into a 12-inch diameter circle. Carefully transfer the rolled dough onto a parchment-lined baking sheet to prevent sticking and for easy transfer in and out of the oven.
  4. Spread Cheese: Evenly spread the herbed goat cheese or ricotta over the center of the dough, leaving a 2-inch border around the edges for folding.
  5. Arrange Vegetables: Layer the seasoned and tossed vegetables on top of the cheese, overlapping them slightly to create an even and attractive vegetable layer.
  6. Fold Edges and Egg Wash: Fold the 2-inch border of dough up and over the vegetable filling to create a rustic edge. Brush the exposed crust with the beaten egg to give it a golden, glossy finish when baked.
