Ingredients
Scale
Brownie Layer
- 1 box brownie mix (plus eggs, oil, and water as directed on the package)
Coconut Filling
- 2 cups sweetened shredded coconut
- 1 can (14 oz) sweetened condensed milk
- 1 teaspoon vanilla extract
Chocolate Topping
- 2 cups semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Prepare Brownie Batter: Preheat the oven to 350°F (175°C). Follow the package instructions to prepare the brownie batter using the brownie mix, eggs, oil, and water. Once mixed, pour the batter evenly into a greased 9×13-inch baking pan.
- Bake Brownies: Bake the brownie batter as per package directions, usually about 25-30 minutes, until a toothpick inserted near the center comes out mostly clean. Remove from the oven and allow the brownies to cool completely in the pan.
- Make Coconut Filling: In a medium bowl, combine the sweetened shredded coconut, sweetened condensed milk, and vanilla extract. Mix thoroughly until the mixture becomes thick and sticky, which will help it spread easily over the brownies.
- Spread Coconut Layer: Once the brownies are cooled, spread the coconut mixture evenly over the top, creating a uniform layer.
- Prepare Chocolate Ganache: Place the semi-sweet chocolate chips and heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring after each until the mixture is smooth and fully melted. Be careful not to overheat.
- Top with Chocolate: Pour the melted chocolate ganache evenly over the coconut layer and spread it out to fully cover the surface.
- Chill Brownies: Place the brownies in the refrigerator for 1 to 2 hours or until the chocolate topping is firmly set.
- Serve: After chilling, cut the brownies into 16 equal squares. Serve chilled or at room temperature for a delicious treat.
Notes
- For a richer chocolate flavor, substitute semi-sweet chocolate chips with dark chocolate chips.
- Store brownies in an airtight container in the refrigerator for up to 5 days to maintain freshness.
- These brownies closely replicate the flavor of the classic Mounds candy bar, making them a nostalgic dessert option.
