Oat Mixture:

  • 1 cup unsalted butter, softened
  • 2 cups packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups old-fashioned oats
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Chocolate Fudge Layer:

  • 1 (14-ounce) can sweetened condensed milk
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Cream butter and sugar: In a large bowl, cream together 1 cup of butter and brown sugar until light and fluffy.
  3. Add eggs and vanilla: Beat in the eggs and 2 teaspoons vanilla extract.
  4. Mix dry ingredients: Stir in the oats, flour, baking soda, and salt until fully combined.
  5. Prepare base: Press about two-thirds of the oat mixture into the prepared baking pan.
  6. Make fudge layer: In a saucepan over low heat, combine sweetened condensed milk, chocolate chips, 2 tablespoons butter, and 1 teaspoon vanilla extract. Stir until smooth.
  7. Layer and bake: Pour the chocolate fudge layer over the oat base, crumble the remaining oat mixture on top, and bake for 25–30 minutes until golden.
  8. Cool and serve: Allow to cool completely before cutting into bars.

Notes

  • For a richer flavor, try using dark chocolate chips.
  • You can add chopped nuts like walnuts or pecans to the oat mixture for extra crunch.
