Instructions

  1. Prepare the Chicken: Cut each chicken breast in half horizontally and use a meat mallet or rolling pin to pound each piece to about ½-inch thickness. This helps ensure even cooking and a tender texture.
  2. Mix the Egg Wash: In a shallow bowl, whisk together the large egg and water until fully blended. Stir in the minced garlic, salt, and black pepper to evenly season the coating mixture.
  3. Coat the Chicken: Place the shredded Parmesan cheese in another shallow bowl. Dip each chicken piece into the egg mixture, allowing any excess to drip off. Then dredge the chicken in the Parmesan cheese, pressing gently so the cheese sticks well. Flip and repeat on the other side. Shake off any excess cheese to avoid clumping.
  4. Cook the Chicken: Heat butter and olive oil together in a large skillet over medium-high heat. Once hot, place the coated chicken pieces in the skillet without crowding. Cook undisturbed for about 3 minutes, or until the edges turn golden brown.
