Description

These Peach Yogurt Popsicles offer a refreshing and creamy frozen treat perfect for warm days. Made with smooth Greek yogurt, sweet honey, and fragrant cardamom, these popsicles balance tartness and sweetness with juicy chunks of frozen peaches, creating a delightful texture and flavor combination without any added preservatives or artificial ingredients.

Ingredients

Scale

Fruit

  • 1 pound frozen sliced peaches

Dairy

  • 2 cups plain Greek yogurt (5% fat)

Sweeteners and Thickeners

  • 2 tablespoons honey
  • 1 teaspoon cornstarch

Spices

  • 1/8 teaspoon ground cardamom

Instructions

  1. Prepare Peach Yogurt Base: Add about half of the frozen sliced peaches, the plain Greek yogurt, honey, cornstarch, and ground cardamom to the bowl of a food processor. Process the mixture until it is smooth, creating a creamy base with well-blended flavors.
  2. Add Peach Chunks: Add the remaining half of the frozen peaches to the food processor. Instead of blending fully, pulse a few times until the peaches break down into large chunks, maintaining some texture within the popsicles.
  3. Fill Popsicle Molds: Scoop the peach yogurt mixture into your popsicle molds evenly. Cover the molds and insert the popsicle sticks securely to prepare for freezing.
  4. Freeze Until Solid: Place the molds in the freezer and let them freeze until fully solid, which typically takes at least 5 hours, depending on your freezer’s temperature. To remove the popsicles, briefly run the molds under warm water to loosen them, then gently slide the popsicles out for serving.

Notes

  • Use Greek yogurt with 5% fat for the best creamy texture, but you can opt for lower fat if preferred.
  • If cardamom is not available or preferred, you can omit it or substitute with a pinch of cinnamon for a different flavor profile.
  • Ensure peaches are frozen to maintain the popsicle texture and to avoid melting too quickly.
  • Running the molds under warm water briefly makes it easier to release the popsicles without breaking them.
