Instructions
- Heat the Oil and Cook Chicken: In a large skillet over medium heat, heat the sesame oil. Add the ground chicken and cook, breaking it apart with a spoon, until browned and cooked through, about 5–6 minutes.
- Add Aromatics: Add minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant, stirring frequently to avoid burning.
- Stir in Vegetables: Add shredded carrots, chopped water chestnuts, and chopped green onions to the cooked chicken. Mix well to combine the ingredients evenly.
- Prepare Peanut Sauce: In a separate small bowl, whisk together creamy peanut butter, soy sauce, rice vinegar, honey, and sriracha (if using). Add 1 to 2 tablespoons of water to thin the sauce until desired consistency is reached.
- Combine Sauce and Chicken Mixture: Pour the peanut sauce into the skillet with the chicken and vegetable mixture. Stir well to fully coat all ingredients. Cook for an additional 2–3 minutes, allowing the sauce to heat through and flavors to meld.
