- Prepare Marinade and Marinate Chicken: In a large bowl or gallon ziplock bag, combine soy sauce, brown sugar, ginger, and garlic to form the marinade. Add the chicken pieces, seal, and refrigerate for at least 2 hours or up to overnight to allow flavors to develop.
- Preheat Grill: Preheat your grill to medium-low heat to ensure gentle cooking and to promote even grilling without burning the marinade sugars.
- Assemble Kabobs: Thread the marinated chicken pieces alternately with the bell peppers, red onions, and pineapple chunks onto skewers, making about 10 skewers total.
- Grill Kabobs – First Side: Lightly grease the grill grates to prevent sticking. Place the kabobs on the grill and cook for 5-7 minutes, allowing the chicken and vegetables to begin cooking through and develop grill marks.
- Flip and Continue Grilling: Carefully turn the kabobs over using tongs, then grill for another 5-7 minutes or until the chicken is completely cooked through and the pineapple and vegetables are tender and slightly caramelized.
