Shortbread Base:
- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¼ teaspoon salt
Topping:
- ¾ cup shelled pistachios, chopped
- ¼ cup granulated sugar (optional)
Instructions
- Preheat Oven: Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
- Mix Butter and Sugar: Cream together butter and powdered sugar until smooth. Mix in vanilla extract.
- Add Dry Ingredients: Stir in flour and salt until dough forms. Fold in chopped pistachios.
- Press Into Pan: Press dough evenly into the pan. Sprinkle with granulated sugar if desired.
- Bake: Bake for 35–40 minutes until golden. Let cool before slicing.
Notes
- For a twist, add orange zest to the dough or drizzle with white chocolate.
