Description

These Red, White, and Blue Taco Bites are a festive and flavorful appetizer featuring blue corn tortilla chips topped with seasoned ground beef, melted Monterey Jack cheese, zesty salsa, and creamy sour cream. Perfect for parties or game day, these bite-sized treats come together quickly and bake to golden perfection.

Ingredients

Scale

Main Ingredients

  • Nonstick cooking spray
  • 1 pound ground beef
  • 1 (1.25 ounce) package taco seasoning mix
  • 35 round blue corn tortilla chips
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 cup red salsa
  • ½ cup sour cream, divided

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with foil and spray it lightly with nonstick cooking spray to prevent sticking.
  2. Cook the Ground Beef: In a skillet over medium heat, cook and stir the ground beef until it is browned and crumbly, which should take about 8 minutes. Drain any excess oil from the skillet.
  3. Add Seasoning: Stir in the taco seasoning mix thoroughly so the beef is well coated. Continue cooking the beef mixture for another 2 minutes to let the flavors meld. Then remove the beef and place it on a paper towel-lined plate to absorb any excess moisture.
  4. Arrange Chips: Spread the blue corn tortilla chips in a single layer on the prepared baking sheet, ensuring they do not overlap to allow even cooking.
  5. Add Toppings: On each chip, place a small amount of shredded cheese, followed by a spoonful of the seasoned ground beef mixture, a dollop of salsa, and a little sour cream. Sprinkle the remaining cheese evenly over the top of each chip.
  6. Bake: Place the baking sheet in the preheated oven and bake for about 5 minutes, or until the cheese has fully melted and is bubbly.
  7. Finish and Serve: Once out of the oven, pipe or spoon a small amount of the remaining sour cream atop each taco bite for an extra creamy finish. Arrange the bites on a serving platter and enjoy immediately.

Notes

  • For a spicier kick, use a hot salsa or add diced jalapeños to the beef mixture.
  • Blue corn tortilla chips can be found in most grocery stores or specialty markets; substitute with regular corn chips if necessary.
  • These bites are best served fresh out of the oven to enjoy the melted cheese and warm toppings.
  • To make assembly easier, prepare all toppings beforehand in small bowls.
