Description

Roasted Carrots with Whipped Ricotta & Hot Honey is a delightful and vibrant dish featuring tender, caramelized carrots paired with creamy whipped ricotta cheese and a spicy-sweet drizzle of hot honey. This simple yet elegant recipe is perfect as a side dish or appetizer, combining the natural sweetness of roasted carrots with the rich texture of ricotta and a zesty kick from red pepper flakes.

Ingredients

Scale

Carrots

  • 1 pound of carrots, peeled and cut into 2-inch pieces
  • 3 tablespoons of olive oil
  • Salt and freshly ground black pepper, to taste

Whipped Ricotta

  • 1 cup of ricotta cheese

Hot Honey

  • 1 tablespoon of honey
  • 1 teaspoon of red pepper flakes

Additional Flavorings & Garnish

  • 2 tablespoons of fresh lemon juice
  • 2 tablespoons of chopped fresh herbs (such as parsley, chives, or dill)

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots evenly.
  2. Prepare carrots: Place the peeled and cut carrots in a large mixing bowl. Drizzle them with olive oil and season with salt and freshly ground black pepper. Toss thoroughly to ensure all pieces are evenly coated.
  3. Arrange on baking sheet: Spread the coated carrots out in a single layer on a baking sheet to promote even roasting and caramelization.
  4. Roast carrots: Roast the carrots in the preheated oven for 25 to 30 minutes, stirring halfway through to ensure even cooking and caramelization. The carrots should become tender and slightly caramelized.
  5. Whip ricotta: While the carrots roast, place the ricotta cheese in a food processor and blend until smooth and creamy, creating a luscious whipped ricotta.
  6. Set ricotta aside: Transfer the whipped ricotta to a serving bowl and keep it ready for plating.
  7. Prepare hot honey: Warm the honey gently either in a small saucepan over low heat or microwave it briefly. Stir in the red pepper flakes to infuse and create a spicy hot honey drizzle.
  8. Finish roasted carrots: Once roasted, remove the carrots from the oven and immediately drizzle them with fresh lemon juice to add brightness and balance.
  9. Plate ricotta: Spoon the whipped ricotta onto a serving platter, creating a small well or indent in the center for presentation.
  10. Add roasted carrots: Arrange the lemon-drizzled roasted carrots artfully on top of the whipped ricotta.
  11. Drizzle hot honey: Drizzle the hot honey mixture generously over the carrots and ricotta, adding a sweet and spicy contrast.
  12. Garnish and serve: Sprinkle the chopped fresh herbs over the dish for a fresh herbal note and serve immediately.
