Ingredients
Scale
Carrots
- 1 pound of carrots, peeled and cut into 2-inch pieces
- 3 tablespoons of olive oil
- Salt and freshly ground black pepper, to taste
Whipped Ricotta
- 1 cup of ricotta cheese
Hot Honey
- 1 tablespoon of honey
- 1 teaspoon of red pepper flakes
Additional Flavorings & Garnish
- 2 tablespoons of fresh lemon juice
- 2 tablespoons of chopped fresh herbs (such as parsley, chives, or dill)
Instructions
- Preheat oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots evenly.
- Prepare carrots: Place the peeled and cut carrots in a large mixing bowl. Drizzle them with olive oil and season with salt and freshly ground black pepper. Toss thoroughly to ensure all pieces are evenly coated.
- Arrange on baking sheet: Spread the coated carrots out in a single layer on a baking sheet to promote even roasting and caramelization.
- Roast carrots: Roast the carrots in the preheated oven for 25 to 30 minutes, stirring halfway through to ensure even cooking and caramelization. The carrots should become tender and slightly caramelized.
- Whip ricotta: While the carrots roast, place the ricotta cheese in a food processor and blend until smooth and creamy, creating a luscious whipped ricotta.
- Set ricotta aside: Transfer the whipped ricotta to a serving bowl and keep it ready for plating.
- Prepare hot honey: Warm the honey gently either in a small saucepan over low heat or microwave it briefly. Stir in the red pepper flakes to infuse and create a spicy hot honey drizzle.
- Finish roasted carrots: Once roasted, remove the carrots from the oven and immediately drizzle them with fresh lemon juice to add brightness and balance.
- Plate ricotta: Spoon the whipped ricotta onto a serving platter, creating a small well or indent in the center for presentation.
- Add roasted carrots: Arrange the lemon-drizzled roasted carrots artfully on top of the whipped ricotta.
- Drizzle hot honey: Drizzle the hot honey mixture generously over the carrots and ricotta, adding a sweet and spicy contrast.
- Garnish and serve: Sprinkle the chopped fresh herbs over the dish for a fresh herbal note and serve immediately.
