- 1 zucchini, chopped
 - 1 red bell pepper, chopped
 - 1 yellow bell pepper, chopped
 - 1 red onion, sliced
 - 1 cup broccoli florets
 
Seasoning:
- 2 tablespoons olive oil
 - 1 teaspoon garlic powder
 - 1/2 teaspoon smoked paprika
 - Salt and black pepper to taste
 
Additional Toppings:
- 1/4 cup crumbled feta cheese (optional)
 - 2 tablespoons chopped fresh parsley or basil
 - 1 tablespoon lemon juice
 
Instructions
- Preheat the oven: Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
 - Prepare vegetables: In a large bowl, toss zucchini, bell peppers, red onion, and broccoli with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on the baking sheet.
 - Roast vegetables: Roast for 20–25 minutes, stirring halfway, until tender and slightly charred.
 - Assemble bowls: Divide brown rice into bowls, top with roasted vegetables, feta cheese, herbs, and a drizzle of lemon juice. Serve warm.
