Description

Instructions

  1. Cook onion: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the finely diced sweet onion and cook for 2-3 minutes until they become soft and translucent.
  2. Add garlic: Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Combine squash and seasoning: Stir in the cubed summer squash and zucchini, salt, pepper, and 1 tablespoon of butter. Cover the skillet with a lid and cook for 5 minutes to allow the squash to soften.
  4. Cook until tender and caramelized: Remove the lid and stir the vegetables. Continue cooking for another 5-7 minutes, allowing the squash to reach your desired tenderness. For light caramelization, let the squash sit undisturbed for 1-2 minutes before stirring.
  5. Serve: Taste and adjust the salt and pepper as needed. Sprinkle with fresh chopped parsley if desired, then serve the sautéed zucchini and squash warm as a delightful side dish.
