Description

Enjoy a delicious and hearty Chicken Avocado Melt Sandwich, perfect for a satisfying lunch or dinner. This recipe features tender seasoned chicken breasts cooked to perfection, creamy avocado, melted cheese, and fresh veggies, all toasted together on your choice of sturdy bread for a warm, flavorful melt.

Ingredients

Scale

Chicken and Cooking

  • 2 pieces Boneless Skinless Chicken Breasts (seasoned well)
  • 2 tablespoons Olive Oil (for cooking)

Spread and Condiments

  • 2 tablespoons Mayonnaise (or reduce for a healthier option)
  • 1 tablespoon Dijon Mustard (substitute with yellow mustard if preferred)

Fresh Produce

  • 1 whole Avocado (ripe for best flavor)
  • 1 small Red Onion (sliced thinly)
  • 1 medium Tomato (ripe and firm)

Cheese and Bread

  • 1 cup Cheese (Swiss/Cheddar/Provolone) (mix types for a flavor medley)
  • 4 slices Bread (sturdy variety) (e.g. sourdough or whole grain)

Instructions

  1. Prepare the Chicken: Heat olive oil in a skillet over medium heat. Season the chicken breasts well with your preferred seasoning. Cook each chicken breast for about 6-7 minutes on each side or until fully cooked through and golden brown. Remove from heat and let rest.
  2. Prepare the Spread: In a small bowl, mix mayonnaise and Dijon mustard until well combined. Set aside.
  3. Prepare the Avocado: Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash lightly to a creamy consistency, leaving some chunks for texture.
  4. Assemble the Sandwich: Toast the bread slices until lightly golden. Spread the mayonnaise-mustard mixture evenly on one side of each slice. Layer on the mashed avocado, then place sliced red onion and tomato over it.
  5. Add Chicken and Cheese: Slice the rested chicken breasts thinly and add on top of the vegetables. Sprinkle the mixed cheese generously over the chicken.
  6. Melt the Cheese: Place the assembled sandwich halves on a clean skillet over medium heat. Cover with a lid to help the cheese melt, cooking for 3-5 minutes until cheese is bubbly and melted.
  7. Serve: Once cheese is melted and bread is crispy, remove the sandwiches from skillet. Cut each sandwich in half if desired and serve immediately.

Notes

  • For a healthier option, reduce the mayonnaise or substitute with Greek yogurt.
  • Use ripe avocado for the best creamy texture and flavor.
  • You can swap out the cheese types based on your preference or availability.
  • Season the chicken well to enhance overall flavor—consider garlic powder, paprika, salt, and pepper.
  • Sturdy bread like sourdough or whole grain holds up best for this melt and prevents sogginess.
