- 0.25 cups Coconut Cream or Regular Heavy Cream (optional)

Instructions
- Heat Oil: In a large skillet, warm up about 2 tablespoons of vegetable oil over medium heat to prepare for sautéing.
- Brown Chicken: Add half of the boneless, skinless chicken thighs to the skillet and cook for 2-3 minutes until browned on the outside; then set aside.
- Sauté Aromatics: In the same skillet, add minced red onion and crushed garlic, sautéing for 1-2 minutes until softened and fragrant.
- Add Spices: Reduce heat, then mix in ground turmeric, cumin, and coriander seeds, stirring for 2-3 minutes to toast the spices and develop flavor.
- Add Heat: Stir in sambal oelek and cook for about 20 seconds to blend the spicy heat into the mixture.
- Simmer Curry: Return browned chicken to the skillet along with cubed pumpkin and chicken stock. Cover the skillet and simmer gently for 15 minutes until the chicken is cooked through and pumpkin is tender.
- Adjust Seasoning: Taste the curry and add salt or seasoning as needed to balance flavors.
- Finish & Garnish: Stir in chopped fresh coriander leaves and pour in coconut cream or heavy cream if using, stirring gently to combine for a creamy finish.

- This recipe uses chicken thighs for better moisture and flavor – chicken breast may dry out.
