Description

This classic Scalloped Corn recipe combines creamy creamed corn, tender corn kernels, and a cheesy Ritz cracker topping baked to golden perfection. It’s a comforting side dish perfect for family dinners and holiday gatherings, delivering a delightful balance of creamy texture and crunchy topping.

Ingredients

Scale

Main Ingredients

  • 30 oz. canned creamed corn (2 – 15 oz. cans)
  • 15 oz. canned corn kernels, drained (1 can)
  • ½ cup crushed Ritz crackers
  • 2 large eggs
  • 1 cup freshly shredded cheddar cheese
  • ¼ tsp ground black pepper

Topping

  • ½ cup crushed Ritz crackers (saltines also work)
  • ¼ cup unsalted butter, melted (½ stick)

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F. Grease a 9×7-inch baking dish thoroughly to prevent sticking and ensure easy serving later.
  2. Mix Main Ingredients: In a large bowl, combine the creamed corn, drained corn kernels, ½ cup crushed Ritz crackers, eggs, shredded cheddar cheese, and ground black pepper. Stir until all ingredients are fully incorporated into a uniform mixture.
  3. Transfer to Baking Dish: Pour the prepared corn mixture into the greased baking dish, spreading it evenly to prepare for baking.
  4. Prepare Topping: In a medium bowl, mix the remaining ½ cup crushed Ritz crackers with the melted unsalted butter. Stir well until the crackers are evenly coated with butter.
  5. Add Topping: Sprinkle the buttered cracker mixture evenly over the top of the corn casserole to create a crunchy, golden topping.
  6. Bake: Place the casserole in the preheated oven and bake for 35 to 45 minutes, or until the topping is golden brown and the casserole bubbles around the edges, indicating it is cooked through.
  7. Cool and Serve: Allow the casserole to cool for about 5 minutes before serving to let it set and make serving easier.

Notes

  • You can substitute saltine crackers for Ritz crackers if preferred.
  • Make sure to drain the canned corn kernels well to avoid excess liquid in the casserole.
  • The casserole can be prepared ahead and refrigerated before baking; just increase baking time slightly if baking from cold.
  • For a richer flavor, try adding ¼ cup of diced green bell pepper or jalapeños to the mixture.
