Description

This vibrant and easy sheet pan recipe combines sweet potatoes, tart cranberries, juicy apple slices, and savory apple or cranberry-flavored chicken sausage. With a hint of cinnamon and simple seasoning, it’s a flavorful one-pan meal perfect for busy weeknights or cozy dinners, offering a balanced mix of sweet and savory flavors with minimal cleanup.

Ingredients

Scale

Main Ingredients

  • 3 medium sweet potatoes, peeled & diced small
  • 6 ounces fresh cranberries (about 1 1/2 cups)
  • 1 large apple, sliced
  • 1 medium sweet onion, sliced in wedges
  • 1 pack sweet apple or cranberry flavored chicken sausage, sliced

Seasonings & Oil

  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Cinnamon, to taste (a little goes a long way)

Instructions

  1. Preheat oven: Preheat your oven to 425º F to ensure it’s hot enough to roast the ingredients evenly and develop a nice caramelization on the sweet potatoes and sausage.
  2. Prepare and mix ingredients: On a large sheet pan, combine the diced sweet potatoes, fresh cranberries, sliced apple, onion wedges, and sliced chicken sausage. Drizzle everything with olive oil, then season with salt, pepper, and a pinch of cinnamon. Toss all ingredients together thoroughly to coat evenly.
  3. Bake the sheet pan meal: Spread the mixture out in an even layer on the sheet pan and bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are fork-tender and the sausage is cooked through. Remove from the oven and serve immediately for best flavor and texture.

Notes

  • You can substitute the chicken sausage with turkey or pork sausage if preferred.
  • If fresh cranberries are unavailable, frozen cranberries can be used; just add them without thawing to avoid excess moisture.
  • The cinnamon adds a subtle warmth and sweetness, so use sparingly to avoid overpowering the dish.
  • For extra crispiness, spread the ingredients out well on the pan without overcrowding.
  • Serve this dish warm as a balanced meal combining protein, starch, and fruit.
